A corner terrace by Stanmore station, a small dining room, and three hats six years running. Daniel Puskas and Anthony Schifilliti opened it in 2012 and built the whole pantry on fermentation and on suppliers they know by name. Seven courses, two hundred and fifty dollars, and it is nowhere near the harbour.
WHY IT’S WORTH IT
1Three hats six years in a row, from a corner terrace next to a suburban station.
2Fermentation as the pantry, not as a technique they show off.
3Thirteen years with the same two people in the same small room.
