A fine-dining chef decided to apply fine-dining discipline to pastry, and the result sits in a glass case on Crown Street looking like jewellery. The Crown on 487 is a doughnut-shaped croissant with white chocolate crème, raspberry glaze, pistachio and rose petals, and they only make fifteen a day because that is all they can.
WHY IT’S WORTH IT
1Fine-dining technique applied to pastry by the chef behind Lumi and Leo.
2Fifteen Crown on 487 a day. When they are gone they are gone.
3The pies are savoury and taken as seriously as the sweet work.
