The Darlinghurst room from the list has closed and Edition now lives at Darling Square. Two brothers put Scandinavian and Japanese together without it feeling like a stunt: wild boar meatballs with lingonberry, smørrebrød of sake-cured beef, matcha hotcakes with preserved plum. It becomes an izakaya at night.
WHY IT’S WORTH IT
1Scandinavian and Japanese as one cuisine, not as a fusion trick.
2A tea list that runs from Chinese jasmine to Japanese gyokuro.
3Café by day and izakaya by night, in the same room.
