Cicerone

THE TAKE

Roman-born chef Stefano De Caro and Isabella Daniali took the old Maybe Frank space on Bourke Street in 2021 and cook the food of one city rather than a country. Roman-style pizza from the wood oven, carbonara and cacio e pepe done straight. A cicerone was the old Italian word for the guide who showed you Rome.

WHY IT’S WORTH IT
1A Roman chef cooking Roman food, not Italian food in general.
2Wood-fired Roman-style pizza, which is a different thing from Neapolitan.
3It takes walk-ins, which almost nothing good in Surry Hills does.
