Keita Abe is from Fukuoka and opened Chaco in Darlinghurst in 2014 doing both yakitori and ramen out of one tiny kitchen. In 2019 he split them: the yakitori moved here to Potts Point, and the old room became Chaco Ramen. Traditional on the skewers, inventive in the bowls, and the two are ten minutes apart.
