Two chefs turned bakers opened this corner shop in 2004 and changed what an Australian bakery is expected to be. There are twelve branches now, but this is the one, and the queue on the footpath is the proof. Ginger brûlée tart and a sausage roll, eaten standing up. That is the whole visit.
WHY IT’S WORTH IT
1The original, from 2004. Twelve branches came after this corner.
2Ginger brûlée tart. Custard, a proper caramel crack, and ginger doing the work.
3Founded by chefs, not bakers, which is why the savoury is as good as the sweet.
