Bill Granger opened this in Darlinghurst in 1993 and it is where the modern Australian breakfast was invented. The scrambled eggs made his name and the ricotta hotcakes with honeycomb butter and banana are still what the queue is for. It is also credited as the first restaurant anywhere to serve avocado toast.
